Nathan’s paring knives are a great choice for smaller, every day slicing and peeling. The blade is kept deliberately short so it doesn’t get in the way of the work, yet the handle is lengthened slightly for optimal comfort and maneuverability.

Nathan Cline paring knives are constructed of high-carbon steel alloys (1084 and 1095), but can also be made from recycled steel if you choose. They’re heat-treated to hardness of 60-65 HRC (Rockwell Hardness Scale C), to resist chipping or breaking. (55HRC and above is considered best for maximum reliability and strength) They’ll hold an exceptionally sharp edge for a long time.
